Giant Molasses Cookies
Enjoying a cookie isn’t for the palate alone, presentation is key in making them appetizing. The flood however is the workhorse, it is the vanilla in the dough…….you can’t go without it, but it rarely makes a statement.
When ready to bake the cookies, preheat oven at 325°. Roll out dough on a lightly floured surface and cut into desired shapes. Place on ungreased cookie sheet and bake for about 10-25 minutes or until cookies are firm.
Let cool and decorate with icing, leave them plain or lightly coat them with powdered sugar.

Peanut Butter Fudge
Add sugar and milk into medium pot and bring to a boil over medium heat, stirring occasionally. Continue heating until mixture achieves softball-like stage (240 deg). Remove from heat and add margarine. Stir until melted. Add peanut butter and stir well; then add vanilla. Stir until well mixed. Pour into greased 9x13 pan and allow to cool. Cut into squares when cool.

Christmas Shortbread with Candied Cherries
Fold in cherries and nuts – this is best done by hand so the cherries keep their shape.
Form dough into long smooth rolls and wrap in wax paper. Shape roll into a square log, if desired.
Refrigerate several hours or overnight.
With a sharp knife, cut in slices; bake for 10 to 12 minutes at 350 degrees.
Graze lighting adds interest by highlighting and accentuating the texture of the cookie. Just be sure not to graze light oneself after the consumption of too many cookies..."
Oatmeal Crispies Recipe
Yields approximately 5 dozen.
Thoroughly cream shortening and sugars (brown sugar, granulated sugar). Add eggs and vanilla extract; beat well. In a separate bowl, sift dry ingredients (flour, salt and baking soda). Add dry ingredients to creamed mixture. Add oats and nuts (and other optional additional ingredients); mix well. Shape mixture into rolls, wrap in wax paper and chill thoroughly.
Preheat oven to 350°F. Unwrap chilled mixture and cut cookie dough to ¼-inch thick slices. Bake on ungreased cookie sheets in oven for approximately 10 mins, or until brown. Remove from oven and transfer cookies onto cooling rack. Repeat baking process for the next batch until dough is gone, or save remaining dough (refrigerate or freeze) and bake at a later date.
